Sun-Dried Tomato & Garlic Dip

Ingredients:
1 8oz pkg of cream cheese
1/2 cup of mayo
1/2 cup sun dried tomatoes packed in oil, drained & chopped
2 Tbs freshly chopped chives
1 clove of garlic, minced
1 tsp freshly ground black pepper

Directions:

Throw all the stuff in a bowl and mix.
Garnish with a few cuts of chives.
Serve with crackers

Katie's Bean Dip

1 can refried beans
1/2 jar salsa
1/2 stick shredded cheddar
2 heaping scoops sour cream
1 small can olives

Combine all ingredients in oven proof dish - bake at 350 for 30 minutes
serve with tortilla chips

Easy Hummus Dip

2 Small Cans Chick Peas (save water from can in separate bowl)
2 Tsp Tahini
1-2 Tsp Olive Oil
1 Clove Garlic
1/8 Tsp Salt
1 Lemon

It all goes in the food processor except for the lemon. A few squirts of the lemon will do. Blend. Add a little chick pea water for desired consistency. Done!

If you'd like to flavor your hummus, throw in marinated artichoke hearts, roasted red peppers, olives...whatever you like!

Super fast: Easy Cheesey MexiDip

I use plain old Canned chili with beans - because this is meant as a party dip and usually made last minute - but I'll bet anything that homemade chili would make this that much better!!!!

2 cans chili with beans (Hormel makes turkey/beef chili - with beans/without - just a matter of taste)
2 8 0z block of cream cheese (softened)
8 oz Shredded Cheddar
1 tomato diced
1/2 cup black olives sliced


Spread the cream cheese evenly on the bottom of a medium casserole dish. Pour the chili over it and cover with Cheddar! Bake for 20-25 minutes on 350 and sprinkle the tomato and olives on top. Allow to set / cool for 5 minutes and serve!

Guacamole

Because no party, or monday in my opinion is complete without Guacamole! Get creative, add ingredients that you like such as roasted corn or grilled pineapple.

3-4 ripe haas avocados

3 Roma tomatoes, diced

2 cloves garlic, minced

1/2 small red onion, diced

2 limes, juiced

1-2 jalapeños, diced

1/4 cup scallions, sliced

1/4 cup cilantro, chopped

Splash of franks red hot sauce

1 tsp Kosher salt or more to taste

Pepper, to taste


In a large bowl combine tomatoes, garlic, onion & 1/2 diced jalapeño

Cut avocado lengthwise across the middle. Carefully stick the thickest part of the knife into the pit to remove. Make 1/2" slices down and across each half of the avocado. Scoop avocado dices into bowl

Add remaining ingredients and stir together with a fork mashing avocado leaving some chunks. Season to taste with salt and pepper. Taste and adjust with more jalapeño or hot sauce if more heat is desired.

Buffalo Chicken Dip (Great for parties or watching the game)

You will need:

1 Rotiseree Chicken (already cooked - typically found in the Deli area of the grocery store)
1 small bottle of Kens Blue Cheese dressing
1 small bottle of Franks red hot sauce
1 stick of butter
3 packages of philedelphia cream cheese (soft)
1 bag of Tostitos Scoops
1 Alluminum caserole dish

Spread the cream cheese across so that the bottom of the dish is comepletley covered. Peel the chicken from the bone (try and get all the chicken you can) Spread across cream cheese. Melt the butter and 1/2 of the bottle of Franks red hot sauce in the mricrowave and pour over the chicken. Pour the blue cheese dressing on top so that the entire dish is covered. Srinkle the rest of the hot sauce on top. Bake in the oven for about 20-30 mins on 375. Let sit for 5 mins before serving.
