3-4 ripe haas avocados
3 Roma tomatoes, diced
2 cloves garlic, minced
1/2 small red onion, diced
2 limes, juiced
1-2 jalapeños, diced
1/4 cup scallions, sliced
1/4 cup cilantro, chopped
Splash of franks red hot sauce
1 tsp Kosher salt or more to taste
Pepper, to taste
In a large bowl combine tomatoes, garlic, onion & 1/2 diced jalapeño
Cut avocado lengthwise across the middle. Carefully stick the thickest part of the knife into the pit to remove. Make 1/2" slices down and across each half of the avocado. Scoop avocado dices into bowl
Add remaining ingredients and stir together with a fork mashing avocado leaving some chunks. Season to taste with salt and pepper. Taste and adjust with more jalapeño or hot sauce if more heat is desired.
