Cowboy Mac


This is a very easy dish to make and very tasty...and the kids love it!!
1 lb elbow macaroni (medium shells are good too)
1 28 oz can crushed tomatoes
1 large green bell pepper (diced)
1 large onion(diced)
1 lb ground beef,chicken or turkey
Brown ground beef, drain
Add a little olive oil to pan and saute onion and pepper until soft
Add tomatoes and ground beef. Cover and cook on medium stirring occasionally for about 20 minutes.
Cook macaroni in salted boiling water and drain. Toss macaroni in the tomato/meat mixture. It will look like there is
too much sauce but the macaroni will absorb it quickly. Stir and serve with grated cheese.
