Mom's Macaroni Salad

This is the best macaroni salad you will ever taste! It is so simple that I am constantly amazed that delis the world over cant seam to make a decent mac salad!

1 lb elbow macaroni (or your favorite pasta noodle)
1 cup mayo
1/3 cup vinagar
1/2 cup sugar
1 green pepper diced / 2 diced tomatoes / a few stalks of celery diced
salt
pepper

"You take your macaroni."
- cook according to instructions on box. Allow for 1 extra minute for tender pasta.
Let it drain. Rinse with cold water thoroughly. Let drain again - almost dry ( This helps the mayo to stick better ) Pour into a very large bowl as you will need the stirring room!
You will not use all of the ingredients -add each slowly until you get the consistency that you want.
When pasta is fully drained, add your mayo - a heaping table spoon at a time - stirring as you go until macaroni is fully coated. Sprinkle sugar over the top surface of the pasta until evenly covered. Drizzle the vinegar over the sugar - "melting" it as you go. STIR QUICKLY. If you see that you have added too much vinegar (ie: a lot of liquid, excess bubbling, or your eyes are tearing) -drain the pasta and add a little more mayo. This should bring you to where you want to be. Stir in your vegetable. Add salt and pepper to taste.
Refrigerate for an hour before serving. (May need to stir in a tablespoon mayo after refrig)

~Mom always uses green pepper. I like the tomatoes better (tomatoes add a wonderful flavor) - but the batch will spoil after a day or 2. Green pepper or celery will last up to 3-4 days!

For a summer time meal - add a can of tuna!
