White Chicken Chili

I first found this recipe by accident (on a can of Bush's Beans!) & now it's a family favorite!

3 tablespoons olive oil
1 medium onion, finely chopped
1 can (4-ounces) chopped green chilies, drained
3 tablespoons all-purpose flour
2 teaspoons ground cumin
2 cans (16 ounces) Great Northern Beans
1 can (14.5 ounces) chicken broth
1 ½ cups finely chopped cooked chicken breast (Sometimes I buy a roast chicken from the deli dept. to save time)
Shredded Monterey Jack or cheddar cheese (optional)
Sour cream (optional)
Salsa (optional)

In large pot, cook onion in oil for 4 minutes or until transparent. Add chilies, flour and cumin; cook and stir for 2 minutes. Add beans and chicken broth; bring to a boil. Reduce heat; simmer for 10 minutes or until thickened. Add chicken; cook until hot.

Garnish with cheese, sour cream and salsa & a few tortilla chips.
The recipe can be doubled (which is what I do) for a bigger family :)

  1. I make this quite often and we love it. I serve it over rice and use either ground chicken or turkey instead of actual chicken.

    this was sooooo good, my girls asked for seconds! I left out the chilles & added bell peppers & tomatoes instead. will make this again for sure!
